Blueberry Apple Pastry - for Jen
As part of the discussion forum for my blog's fan page, I have started a new, secondary project. In that project, I randomly tag fans of the page and/blog and solicit their opinion on what their favorite food item is. Then, together, or, if I have to, singularly, we will deconstruct their dish and, if possible, come up with a faster, fresher, or healthier alternative.
I have to confess that this first one stumped me, (thanks, Jen) until I remembered a neat pastry trick that Mom taught me about 20 years ago... I should have known better than to allow desserts as suggestions, because boy, oh boy, are some of the suggestions I've gotten doozies...
So to start it off, Jen said that her favorite food on the go is a Blueberry Pop Tart. Hmm... All the vitamins and minerals you could ask for in one sugary mouthful... How in the WORLD does one deconstruct that, and come up with something healthier?
So...Here you go...
Blueberry Apple Pastries
Ingredients
2 tbsp sugar ... See More
1 tbsp cornstarch
2 medium apples , peeled, cored, and chopped, about 2 cups
1/2 cup fresh blueberries , or frozen
1 1/2 tsp water
1/2 tsp grated orange peel , finely shredded
17 oz frozen puff pastry dough , 2 sheets
1 tbsp orange icing
Directions
1 Preheat oven to 375 degrees F. Line a large baking sheet with foil then set aside.
2 Stir together the sugar and cornstarch in a medium saucepan, then add apples, blueberries, and water.
3 Cook and stir the mixture over medium heat until it becomes thickened and bubbly, then cook and stir for 2 more minutes.
4 Stir the orange peel into the mixture, remove from heat , and allow it to cool completely.
5 Thaw the folded puff pastry for 20 minutes at room temperature, then unfold and roll each sheet of pastry on a lightly floured surface into a 15 x 10 inch rectangle, and cut each sheet into ten 5 x 3 inch rectangles.
6 Spoon about 1 tablespoon of the filling on half of each rectangle covering up to 1/2 inch of the edge, then brush the edges with water.
7 Take pastry and lift up and over filling starting from a short side and use the tines of a fork to press the edges of the pastry to seal.
8 Place each pastry onto the prepared baking sheet.
9 Bake the pastries for 18 to 20 minutes or until golden.
10 Remove from oven and place on a wire rack to cool.
11 Drizzle orange icing over each pastry
